This is super easy to make..it is filled with protein and nutrition and can be eaten as a main or a side dish.

Ingredients

  • 1 Cup Brown Rice

  • 1 Cup Lentils

  • 1 Onion (finely chopped)

  • 1/2 cup frozen peas

  • 1/2 cup frozen mealies

  • 1 cup of cooked beans

  • Fresh Salad goods (lettuce, spinach, tomato, coriander, pitted olives, chives) chopped into bite sized bits. (Here you can play, add what you have)

  • Fresh carrots and beets and butternut finely chopped

  • Salad Dressing

  • Salt and Pepper to taste.

Directions

  • Rinse and Bring rice and lentils and onion to the boil. (I switch it off and let it steam and absorb moisture until rice and lentils are cooked.
  • While waiting for rice to cool down, chop veggies and salad goodies.
  • Make Salad Dressing.
  • Add all ingredients into a bowl and mix gently. Add salad dressing and serve.

Notes

  • If you have non vegetarians, add Feta for a salty delight. Enjoy! Play with your food…
