This is super easy to make..it is filled with protein and nutrition and can be eaten as a main or a side dish.

1 Cup Brown Rice
1 Cup Lentils
1 Onion (finely chopped)
1/2 cup frozen peas
1/2 cup frozen mealies
1 cup of cooked beans
Fresh Salad goods (lettuce, spinach, tomato, coriander, pitted olives, chives) chopped into bite sized bits. (Here you can play, add what you have)
Fresh carrots and beets and butternut finely chopped
Salad Dressing
Salt and Pepper to taste.
Directions
- Rinse and Bring rice and lentils and onion to the boil. (I switch it off and let it steam and absorb moisture until rice and lentils are cooked.
- While waiting for rice to cool down, chop veggies and salad goodies.
- Make Salad Dressing.
- Add all ingredients into a bowl and mix gently. Add salad dressing and serve.
Notes
- If you have non vegetarians, add Feta for a salty delight. Enjoy! Play with your food…
